Veggie Stir Fry

I just tried this veggie stir fry recipe from the 3 Day Refresh program guide last night for dinner on my first night of the refresh...so simple, but soooo good!! I'll definitely be using this one again and probably often!

Recipe:
1/2 tsp extra virgin olive oil
1/2 clove of garlic, chopped
1/2 tsp of fresh ginger, grated
1/2 cup of green beans
1/2 cup of sliced fresh carrots
1/2 cup of sliced red pepper
1/4 sea salt (I actually used Himalayan salt)
2 Tbsp of organic vegetable broth
1. Heat oil in medium skillet over medium heat; add garlic and ginger
2. Cook, stirring frequently, for 1-2 minutes or until fragrant.
3. Add green beans, carrot, red pepper, salt, and broth.
4. Cook for 5 to 7 minutes or until vegetables are tender-crisp. I covered it for a few minutes for faster cooking.
