Banana Apple Muffins - Gluten-free!

I just made Autumn's Banana Apple Muffins from the FIXATE cookbook. They're gluten-free, easy to make, and 21 Day Fix approved...and quite tasty!!
Total Time: 28 min. Prep Time: 10 min. Cooking Time: 18 min. Yield: 9 servings, 1 muffin each
Ingredients: 2 large eggs, lightly beaten 1 cup mashed ripe banana (about 2 medium bananas) 1 Tbsp. melted organic, grass-fed butter 1½ cups almond meal ¾ tsp. baking soda 1 dash sea salt (or Himalayan salt) ½ cup chopped apple (about ¾ medium apple)
Preparation: 1. Preheat oven to 350° F. 2. Prepare eight muffin cups by lining with muffin papers or coating with spray. 3. Combine eggs, banana, and butter in a medium bowl; mix well. Set aside. 4. Combine almond meal, baking soda, and salt in a medium bowl; mix well. 5. Add almond meal mixture to egg mixture; mix until just blended. 6. Divide batter evenly among prepared muffin cups. 7. Bake 16 to 18 minutes, or until golden brown and tester inserted into the center comes out clean. 8. Transfer muffins to rack; cool.
