Haricots Verts with Shallots

There is nothing I love more than when you can take a delicious and easy recipe and make one tiny change to make it a whole lot healthier! Last night, I altered this simple Haricots Verts recipe that I've been using in different variations for years...just removed the butter and kept salt to a minimum. Want to make it even better? Add some toasted almonds and you have Haricot Verts Almondine!
